Today I will show you How to make Brownie Cake with Caramelized Sugar. For all chocolate lovers, today we are making brownie cake. This recipe requires a little bit of work. It is not as difficult as other baking recipes, but you must pay attention to details to get the best result. Get your ingredients ready and start cooking.
Preparing the Brownie Batter
Remember the Bain Marie we used in the Brownie Cheesecake? Well basically we are going to use the same method to melt the chocolate. Today, we are using more chocolate so the portions have changed. Put the bowl in the Bain Marie and add all the chocolate and butter on it. Start stirring the chocolate as soon as it starts melting. When it is melted, take the bowl off the pan, and start adding the egg yolks one by one. You might let the mixture to cool down for a moment before adding the egg yolks. There is a high chance of yolks getting cooked while you add them to the mixture. Stir as fast as you can to prevent this issue.
Now its time to add the other ingredients. Mix all four (flour, salt, sugar, baking powder) together, and add them to the previous mixture. Stir and make sure the batter is homogeneous. If you are a vanilla fan, you might add 2 tsp. of vanilla extract. Preheat the oven at 180C(350F) and bake the mixture for 25 minutes in a cheesecake pan.
Preparing Frosting
Using Bain Marie again, melt the chocolate and the butter. As soon as it is melted, add the heavy cream and stir it smoothly. In Another pan, just add the sugar and start stirring it until it starts melting and it gets the dark brown color. There is no need to add water to the sugar. When the sugar is caramelized, add a few drops of lemon to prevent Crystallization. To make the sugar decoration as in the picture, use an aluminum foil and a fork. Dip the fork in the sugar and start painting in the aluminum foil. You can make any shape that you want. When the sugar is cooled down, it will freeze and it will be ready to be put on top of the cake.
How to make Brownie Cake with Caramelized Sugar
After the brownie base is cooled down, add the frosting on top. Make sure to add the caramelized sculptures that you made above. It is suggested to serve the cake with your favorite Ice Cream.
